Rooibos is a small shrub (Aspalathus linearis) that originates from South Africa, more specifically from the very arid and mountainous Cederberg region.

For several hundred years now, in these mountains north of Cape Town, local people have been harvesting the aerial parts of wild rooibos. They fermented them to make a reddish-colored infusion with a sweet and fruity taste. Consumed hot or cold, this infusion is now considered the national drink of South Africa. And for the last thirty years or so, it has been exported around the world, particularly to Europe.

Rooibos is considered an herbal tea or infusion because it does not contain caffeine. It is sometimes mistakenly called red tea, but it does not come from the same shrub as tea.
